Papa Bob's Famous Salsa

24 Tomatoes- washed, peeled and chopped Simmer for 1 hour
*hint: for easy skin removal put tomatoes in boiling water for 15-25 seconds, remove and peel
*hint: If you freeze the tomatoes the water will move to the top and you can remove the water to cut down on simmer time

Add:
2  Onions- chopped
1 Sweet Red pepper-chopped
2 Jalapenos  (seeds of Jalapenos will add heat, if you want more mild dont put seeds in)(but why bother...)
2 Bell Peppers-chopped
4 Cloves Garlic
Simmer for 45 Minutes

Add:
4 T Brown Sugar
2 T White Sugar
3 T White Vinegar
6 tsp. Salt ( or 1 tsp. garlic salt & 5 tsp. regular salt)
Simmer 30 minutes and put in bottles

To Bottle:
clean and sanitize bottles in dishwasher
fill bottles to within 1/2 inch of top
put lids in simmering water to sanitize and soften rubber
wipe tops of bottles to make sure they are clean
put lids and rings on bottle, hand tight
put in canning pot
after water comes to a boil, leave in for 30 minutes

ZESTY SUMMER SALAD

4-6 chicken breasts teriyaki style: 1 cup honey, 1 cup soy sauce, dash of garlic; marinade overnight. Right before you make the salad, bake chicken @ 350 for 25 minutes. Cut into cubes.

{ Mix the following in a large bowl }

3 cans black beans
3 cans white corn, drained
2 cucumbers, chopped
2 avaocados, ch0pped
3 tomatoes, chopped
1 of each, red, green and yellow pepper, chopped
1 red onion, chopped
4-5 fresh limes squeezed over the top of ingredients
3 TB. rice vinegar

{ set aside }

1-2 heads of lettuce
1 bag lime tortilla chips
1 pkg HOMEMADE ranch dressing {follow directions on package}

{ how to serve }

Place chips on the bottom of plate follow with lettuce, veggies/chicken mixture, and top with ranch dressing.

{Syd's notes} This seriously makes a ton. Great recipe for a large crowd. If there's still leftovers, cook some linguine, toss with a little olive oil and ranch dressing and mix in veggie mixture. Delicious!

BBQ chicken pizza

Pizza Crust- I used the Betty Crocker, just add water pizza crust for this pizza but I really like the Pillsbury pizza dough that comes in the fun tube you get to open. I've also made it using Boboli crusts. Whatever you like or have on hand!
2 chicken breasts- If I'm making them just for this pizza I'll cook them in BBQ sauce but if I have some precooked then I just cube them and stir in BBQ sauce and let them sit while I assemble the rest of the pizza.
Cilantro- 1/4 bunch, chopped finely
Red Onion-thinly sliced
Cheese- LOTS OF IT. I usually have Mozzarella on hand so that's what I use but it's also good with Provolone or Gouda.
BBQ Sauce.
So spread some BBQ sauce on your pizza dough. Top with onion, cilantro and chicken and cover with cheese. Cook in 450 oven for about 12 minutes until crust is brown and cheese is melted. Enjoy!!

Kneaders Chunky Cinnamon French Toast

1 loaf Kneaders Chunky Cinnamon Bread cut in 8 slices
8 eggs
3 c. milk
1 T. brown sugar
3/4 tsp. salt
1 T. vanilla
2 T. butter

Butter a glass baking dish generously (9" x 13"). Place the bread flat in the baking dish. Mix all remaining ingredients, reserving the butter and pour over the bread. Cut butter into pieces and dot over the top. Refrigerate over night or at least 1 hour. Bake 45 - 50 minutes at 350 degrees. Serves 8

Kneader's Carmel Syrup
1 c. Brown sugar
1 c. Creme
1 c. Light Karo Syrup
Blend together and heat on stovetop until sugar is smooth.
Serve warm.

Yummy Breakfast Bars

2 cans crescent rolls 
8oz softened cream cheese 
1 1/4 cup sugar 
1 tsp vanilla 
1 tsp cinnamon 
1 stick butter 

Spread one can of crescent rolls on the bottom of a 9x13 pan. Mix softened cream cheese with one cup sugar and vanilla and spread over rolls. Spread 2nd can of crescent rolls over mixture. 

Melt butter and pour over rolls. Sprinkle with remaining sugar and cinnamon.

Bake in 350 oven for about 18 min

Orange Fluff

1 small cook and serve vanilla pudding
1 small cook and serve tapioca pudding
1 large orange jello
3 cups water

Bring to boil and then cool completely. Mixture will be set.

Mix in 8 oz cool whip and 2 cans mandarin oranges.

{Syd's Notes}- yummy goodness. If you're a jello fan, this is addicting and very easy to make.
